How we tested

Performance

Contact grill mode for burgers was the standout test. A 1/2-inch thick beef patty reached safe internal temperature in 4 minutes 30 seconds at the medium-high dial setting (around 375ยฐF surface, verified by infrared). The simultaneous top-and-bottom contact reduced cook time versus a pan by about 40%, and the ribbed plates produced visible grill marks with proper char on both surfaces. The floating hinge opened to accommodate the patty thickness without squeezing out moisture.

Panini press worked exactly as expected. A ciabatta sandwich with mozzarella and roasted peppers pressed crisp and melted in 3-4 minutes. The top plate pressure is firm without being aggressive - fragile bread held its shape.

Full flat griddle mode produced even pancakes across the entire 11x11-inch surface. Infrared mapping showed a maximum temperature variance of 18ยฐF across the surface at a medium setting - acceptable for pancakes and eggs. No cold spots in the corners.

Half-and-half mode with the two independent temperature dials is legitimately useful for simultaneous cooking of items at different temperatures - bacon on the ribbed side at high, eggs on the flat side at medium-low, without cross-interference.

Cleanup was consistently fast. Both plates lift out with a quarter-turn and drop straight into the dishwasher. The drip tray collects fat cleanly but does fill quickly with two burgers - empty it between cooking sessions to avoid overflow.
