Rise height cleared the rim of the bread pan on 12 of 14 test loaves using standard bread flour and active dry yeast. The two under-rises traced to an ambient kitchen temperature below 65ยฐF, which affected yeast activation before the machineโ€™s warm phase.

Whole wheat at the wheat setting took approximately 3.5 hours. Results were denser than white bread, as expected from the flour, but the crust browning remained even and the crumb was properly moist - not the dry, crumbly result a shorter cycle would produce.

Gluten-free loaf on the dedicated setting was the most impressive result. Gluten-free bread requires a different rise profile - xanthan gum substitutes for glutenโ€™s structure, and the timing of heat application matters significantly. The Virtuoso Plusโ€™s GF cycle produced a loaf with a real dome, a sliceable crumb, and no gummy center.
