What to look for
TDP rating
The i7-8700K under full boost with no limits can exceed 150W. Look for coolers rated at 180W to 200W or higher.
LGA1151 v2 (Coffee Lake)
Some older coolers do not fit the slightly different keep-out zone of Coffee Lake boards. Verify compatibility is specifically listed for 8th or 9th-gen LGA1151.
Fan size
A 140mm fan provides meaningfully more airflow at lower noise than 120mm at the same RPM. This matters on a chip as thermally demanding as the 8700K.
Delidding consideration
