Heat distribution: this is what makes the saute pan work

In our slurry test, the cooking surface browned across 84 percent of the pan in 4 minutes on medium. That uniform heat means a chicken thigh sears edge to edge instead of just in the center. When you deglaze and braise afterward, the resulting fond is even across the pan, which makes for better sauce.

Sear performance: 6 thighs in one batch

The 11-inch diameter cooking surface fits 6 boneless skin-on chicken thighs without crowding. Crowded sears steam instead of brown. Uncrowded sears in this pan produce edge-to-edge crust on every piece. The recovery time after adding cold meat is fast because the 3-ply construction conducts heat well.

Lid seal and braise performance

The lid sits flush on the rim and creates a tight enough seal to retain moisture during 90-minute braises. In our evaporation test at low simmer, the pan lost 1.8 ounces over 90 minutes. The straight 2.5-inch walls hold enough liquid for a coq au vin or chicken cacciatore without overflow.

Build quality: 12 months, no issues

Monthly torque checks on the rivets showed no loosening. The cooking surface developed light heat tinting around month 6, cleaned back to mirror finish with Bar Keepers Friend. The helper handle on the opposite side balances the pan well when carrying full.

Handle: the same All-Clad complaint

The angular stainless handle gets hot. After 8 minutes of simmering on medium-low, the handle base read 162F. Above 425F oven, you cannot grab it without a folded towel. A silicone handle cover ($8 on Amazon) solves this for under $10.

Value math: $215 for the most-used piece

At $215, this is the most expensive single piece in our cookware lineup, but it is the one I reach for most often. Per session of use over its expected 25-year lifespan, the cost is under $0.10. The Made In 4qt at $169 is the smarter deal for most buyers.
