Steam power: cafe-grade
Texturing 10 oz of whole milk to 145F took 14 seconds on average, which is faster than the Profitec Pro 300โs 18 seconds and faster than the Rocket Appartamentoโs 15 seconds. The 1.8 L HX boiler has the largest steam reserve in the price class. Back to back, I steamed 4 milk pitchers with no measurable pressure drop.
Build and finish: Italian polished steel
The Mara X weighs 44 lb. The chassis is steel, the panels are polished stainless, and the finish is on par with the Rocket Appartamento. The portafilter is the heavy commercial Lelit unit. Light roast performance: where the smart HX shows up
The combination of brew thermocouple plus active PID lets the Mara X hold a target brew temperature precisely. I run light Ethiopians at 204F and dark Brazilians at 198F just by adjusting the setpoint. The E61โs thermal mass holds the temperature through the entire 30 second pull. This is the closest an HX machine gets to dual-boiler temperature precision and it is enough for any home roast level.
Workflow: less efficient than dual boiler, more characterful
The Mara X requires the standard HX flush before pulling the first shot of the morning, you flush 4 oz of water from the group to bring the thermosiphon to brew temperature. After that, back to back shots are stable. Steaming uses the same boiler as brewing, so a steam-then-brew sequence requires a 30 second cool-down. The Pro 300 does not have this limitation. For a single drink at a time the Mara X workflow is clean. For 4 milk drinks at once, the Pro 300 is faster.
Pump noise: the one weakness
At 65 dB measured 12 inches from the chassis, the Mara Xโs pump is louder than the Rocket Appartamentoโs 60 dB. The Ulka pump is the standard one, not the quiet variant. It is not loud in absolute terms but it is the loudest part of an otherwise refined machine. If your machine sits in an open kitchen and you brew at 6 am, this is worth knowing.
