How we tested the Sonder LA walnut

Edge preservation: matches Boos walnut

After 4 weeks of exclusive use on the Sonder LA, the BESS edge tester read 198 on the Wusthof chef knife. The Boos walnut for the same period read 195 on the same knife. That difference is inside the noise of the BESS measurement, so I call them equivalent.

The juice groove: actually useful

The reverse side has a routed juice groove around the perimeter. I tested it on 6 carved roasts. Roughly 80 percent of the fluid stayed inside the groove. The remaining 20 percent crept out at the corners where the groove meets the edge. That is a real improvement over a flat board and worth the $50 saving vs the Boos in households that carve regularly.

Build quality and stability

The 17x13 board is 1.5 inches thick. After 6 months it has stayed flat to within 1/32 inch. No glue separation, no cracks. 16 lbs, heavy enough not to slip.

Maintenance

Standard end-grain routine. Monthly mineral-oil treatment. Hand-wash, dry immediately. The pre-applied beeswax finish lasted about 6 weeks before the surface looked dry and needed the first re-oil. From there a once-a-month cadence has been right.

Sonder vs Boos: where the savings come from

Sonder is a newer brand based in Los Angeles. The wood and construction are equivalent to Boos by my inspection. The differences are the 5-year warranty (vs Boos lifetime), no Mystery Oil branded option, and the juice groove on the reverse side. For a household that carves often, the trade is worth it. For a household that wants the safest long-term bet, Boos.

Should you buy the Sonder Los Angeles Walnut End-Grain Cutting Board?

After 6 months of daily prep on the Sonder LA walnut end-grain board, edge preservation is statistically equivalent to a John Boos walnut by my BESS readings, and the board stayed flat. The juice groove on the reverse side actually catches fluid from a roast carve. At $135 it is $50 under the Boos walnut for similar performance. The brand is newer and the warranty is shorter, but the board is the right value pick if a juice groove matters.

Is the Sonder LA worth $135 over a John Boos at $185?+

If a juice groove matters or you carve roasts often, yes. Edge preservation is within test margin and the price difference is $50. If you want the longer warranty and decades of brand history, the Boos is the safer buy.

Does the juice groove actually work?+

Yes. We carved 6 roasts over the test period. The groove caught about 80 percent of the fluid that would otherwise have run off the counter. The other 20 percent escapes at the corners. Real improvement over a flat board.

How does the 5-year warranty compare to Boos lifetime?+

The Boos lifetime is meaningful because two of my friends have used it after 7 years. The Sonder 5-year is shorter but the board is a third newer in the market. I have not had a warranty issue in 6 months.

Maintenance routine?+

Same as any end-grain board. Monthly oil with food-grade mineral oil. Hand-wash, dry immediately. The pre-applied beeswax-and-oil finish lasted about 6 weeks before needing the first re-oil.
